This is a variant on a smoothie from my goto green smoothie book, Green for Life. I subbed a number of things and tried to go easy on the cilantro. I love cilantro, it’s so tasty, but didn’t want to be overpowered by it. Serve this chilled with a touch of sea salt on the glass rim at your next BBQ. It’s loaded with antioxidants, vitamins, minerals, and fiber.
Put everything in your blender in the following order and blend until smooth.
2 cups water
3 small tomatoes (about 10 oz)
1/2 a large red bell pepper
1 clove fresh garlic (that’s right, it’s raw baby!)
Juice of 1/2 a lemon
2 cups of spinach (about 2.5 oz weight)
1/2 bunch of cilantro
2 medjool dates (remove pits)
Turns out a bit frothie (maybe a bit of avocado would help with that) but it’s oh so delicious. The garlic is noticeable but not too much. Everything is nicely balanced and slightly spiced. Enjoy and let me know if you try it, or any variations of your own.
