Winter Roots Omelet

Feast your eyes on this morning’s breakfast.

3 eggs (1 yoke)
red onions
shallots
left over roasted roots (yellow and orange carrots, beet, parsnip, sweet potato, daikon)
nutmeg/cinnamon
allspice
salt
veg oil

All the ingredients are wrapped inside what looks more like a crepe than an omelet. Make this as a healthy alternative for that eggs-n-hash lovin’ fool you know.

All ingredients (sans tomatoes) are organic and locally grown from Winter Moon Roots and Stillman’s Farm.
